Chai gravitaire

At Les Garidelles, the winery was conceived as a tool in the service of the grapes and the winemaking process. Designed on a single level, it operates almost entirely by gravity to minimize handling and preserve the grapes as much as possible. The underground concrete tanks, the short processing routes, and the fluid layout of the spaces: everything was designed to make the work simpler, more precise, and less reliant on machinery.

This project, featured in La Vigne magazine in the “Bien chai moi” special section, also reflects a particular vision of wine: seeking balance, staying true to the fruit, and creating a space that aligns with our day-to-day work practices.
